Sugar Free Cake

I love dessert. Although this may not come as a surprise to those who know me, but for the readers who don't, I'd like to say that I simply cannot live without having dessert after dinner. It's something about taking that one bite and being delivered into sweet heaven. Perhaps I'm tempting you to have something sweet at the moment, but not everyone can be fortunate in that department. I'm talking about those who are advised by doctors to be on a sugar free diet. It sucks when you can't have sugar but crave for something sweet. Doesn't it make you want to raid your refrigerator and eat anything and everything you can get your hands on? Although I tend to do that sometimes for the heck of it, you don't need to follow suit. You can easily have sugar free desserts whenever you want. How? By making the following sugar free cakes, that's how. Would you like to find some mouthwatering sugar free cake recipes from scratch? • 3 tablespoons unsweetened cocoa powder, sifted
  • 3 cups Splenda
  • 2 tablespoons whole milk
  • 2 tablespoons buttermilk
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract

To prepare this sugar free chocolate cake recipe, preheat the oven at 350º F and grease 2 round 9'' cake pans. In a bowl, mix eggs, milk, vanilla, and oil together. In a separate bowl, mix baking soda, baking powder, flour, Splenda, and cocoa powder together. Add the wet ingredients in and with a hand blender, mix everything for couple of minutes. Slowly add the water in as you mix. In the end, add the shaved chocolate as well. Pour the batter inside both pans and place in the oven for 30 to 35 minutes. Do a quick toothpick test to see if the cakes are ready. Remove from the oven and let them cool on the side. Till then, we will make the sugar free cake icing.

To make the chocolate icing from scratch, in a blender, mix flour and buttermilk together. Place a pan on stove and pour the mix in it. Let the mixture turn thick and then set it aside to cool. Once slightly cool, add Splenda, cocoa powder, butter, and vanilla in. Add milk in the end and beat again with an electric blender. When you get a smooth consistency, use this icing on the sugar free cake.
